Ingredients:
1. One small onion
2. A quarter cup of finely chopped celery.
3. One small carrot.
4. Two tablespoons butter.
5. Four large tomatoes.
6. Four cups of chicken stock.
7. Two tablespoons uncooked rice.
8. Small amount of salt.
9. Small amount of peppper and finely chopped fresh parsley.
Cooking Method and Preparation:
1. Thinly slice the onion.
2. Wash, peel and chop carrot into small chunks.
3. In a saucepan, saute onion, celery and carrots in butter until all become softeneed.
4. Add tomatoes and a small amount of chicken stock.
5. Simmer for 15 minutes.
6. In a stock pot, combine sauteed vegetable, spices, remaining chicken stock and rice.
7. Season with salt and pepper. Simmier 20 to 30 minutes. Served garnished with parsley.
