Ingredients:
1. 1 carrot.
2. 3 cups cooked brown rice
3. Half of a cup finely chopped onion.
4. 1 tablespoon minced fresh parsley
5. One and a half cup of evaporated skim milk (try plain yogurt instead.
6. Half of cup of egg yolks.
7. Tablespoons grated nonfat or reduced-fat Parmesan cheese.
Cooking Method and Preparation:
1. Wash the carrots, peel and cut it into small chunks.
2. Combine the carrots, rice, onions, herbs, and salt in a bowl, and stir to mix well.
3. Add the yogurt and egg yolks, and stir to mix.
4. Coat casserole dish with nonstick cooking spray, and spread the mixture evenly in a dish.
5. Sprinkle cheese over the top.
6. Bake at 350 degrees for 50 minutes to 1 hour, or until a sharp knife inserted in the center of the dish comes out clean.
7. Remove dish from oven and let it cool for 5 minutes before serving.

Remark of Carrots with Brown Rice:
Carrot is good for vision development of the growing baby.
Brown rice is rice including the husk that is thrown out trying to make polished white rice. Products such as rice bran are the product of unpolished brown rice.
