Black rice vinegar trotters is a common dish that mothers will consume during confinement.
The rice vinegar is often made from unpolished rice, millet, wheat or sorghum. Thus, consuming a moderate amount of black vinegar benefits our body as it contains acetic acid, an organic acid that may help to reduce glucose or sugar levels in your blood.
It also helps mothers who has given birth in contracting the uterus, healing congestion problems and relieving constipation. There are also many essential amino acids in black rice vinegar which is required by your body for extensive functions such as repairing muscle tissues and increasing energy.
In addition, pig trotters are rich in natural collagen and strengthen your back and joints.
How to cook Black Vinegar Trotters:
1. Heat wok to fry thick sliced (Beng Dong Ginger). Add in 10 tbsp of sesame oil.
2. Add in blanched pig trotters and fry till fragrant.
3. Add in brown sugar, stir well.
4. Transfer the pig trotters to a clay pot and add 1L water into the pot and one bottle of dog brand Black Rice Vinegar.
5. Once it is boiling, reduce to medium low fire and let it boil for 30 mins. Add salt and dark brown sugar.
